Serves 8
 
Ingredients:

4 cooked beetroots, roughly chopped
1 green chilli, roughly chopped
2 tomatoes, roughly chopped
1 onion, roughly chopped
A pinch of salt

   
Method:  

Place all the ingredients in a blender or food processor and blend till grainy or the consistency of basil pesto.
Serve as a side relish or dip which can be mixed with natural yogurt.
