Easter Biscuits

Here’s a quick recipe for a last minute sweet treat over the holidays or any day for that matter as they’re fruity and not too sweet.

Makes approximately 24 biscuits

90g caster or granulated sugar
90g butter, softened at room temperature
1 free-range egg
220g plain flour
1/4 tsp mixed spice
55g currants
30g candied peel or mixed dried fruits or sultanas
1 tbsp icing sugar, for dusting


Preheat the oven to 160C/325F/Gas 3. Line a baking tray with greaseproof paper.
Cream the butter and sugar together in a bowl until light and fluffy. Beat in the egg until well combined.
Fold the flour into the mixture, then stir in the mixed spice, currants and candied peel. Form a stiff dough.
Roll the dough out onto a floured surface about 4mm thick and cut out the biscuits with a cutter. Place onto the baking sheet and bake for 10-12 minutes until pale golden.
Remove the biscuits from the oven and the tray and set aside to cool on a wire rack. Sprinkle with icing sugar and serve.
