Keema Kofta - Lamb Meatballs in Spiced Tomato Curry

The word kofta is a Persian word which is used in India, Central Asia and the Middle East through to the Balkans and North Africa.

Koftas are predominantly meatballs made from ground or mashed meat although there are vegetarian options too. This recipe inspired by the former Moghul emperors of India, uses minced lamb. However you could mince some boneless chicken.

Serves 4-6
 
Ingredients:

For the Meatballs:
500g lean minced lamb
1 tsp garam masala
2 green chillies, finely chopped
a handful of washed and chopped coriander leaves
1/2 tsp salt

For the Sauce:
3 tbsp sunflower or olive oil
2 onions, finely chopped
2 tsp peeled and grated root ginger
4-6 garlic cloves, crushed
1/2 tsp turmeric
1 tbsp ground coriander
1/4 tsp chilli powder
1/4 tsp ground cumin
200g chopped tomatoes
1/4 tsp salt
1/4 tsp garam masala

   
Method:  

First make the meatballs. Put the lamb, garam masala, green chillies, coriander leaves and salt in a bowl and mix well. Roll into golf balls and set aside or place covered in the refrigerator.

Heat a large pan on a medium heat and add the oil. Tip in the onions and fry for 7-8 minutes until golden brown. Add the ginger and garlic and fry for 2 minutes. Add the turmeric, ground coriander, chilli powder and cumin.
Mix well for a minute. Tip in the tomatoes. On a low heat, cook the sauce till droplets of oil appear on the surface. Add 300ml of water and mix. Now put the meatballs into the sauce and stir in the salt. Cook for 15-20 minutes. Sprinkle over the garam masala and serve hot with plain Basmati rice.
