Roast Onions

Leftover onions, make a great warming treat to accompany any full roast dinner.

Or they can be served on their own as part of a salad platter with a fresh salad.

Serves 4

4 small or medium sized onions, unpeeled
2 tbsp olive oil
1/4 tsp coarse sea salt
1/4 tsp freshly ground black pepper


Preheat the oven to 200C/400F/Gas mark 6.
Cut the raw, unpeeled onions in half from top to bottom.
Put in a roasting tin in a single layer.
Drizzle with the oil.
Sprinkle over the salt and freshly ground black pepper.
Place in the oven for 20-40 minutes turning once halfway through cooking.
To eat, cut off the root end and, if small enough squeeze out the onion.
