Black Tea has strong antioxidant properties which counteract the damaging effects of free radicals (molecules that form in the body, particularly as a result of exposure to the sun and to pollution). A cup of masala chai makes a great pick me up packed with powerful spices. This recipe is taken from the cookbook Everyday Healthy Indian Cookery.
2cm piece of cassia bark or cinnamon stick
1 green cardamom, slightly crushed
1/4 tsp fennel seeds
2 tsp sugar (optional)
2 tsp tea leaves or 2 tea bags
Bring about 375 ml of water to the boil in a saucepan and then add all the spices and continue boiling for a couple of minutes. Add sugar, if using, and mix. Take the pan off the heat and tip in the tea. Reduce the heat to low. Put the pan back on the heat and simmer for one minute. Add the milk and continue to simmer for a further two minutes.
Strain the tea into small cups and serve at once.
